A Coppino of story

We too were migrants. We took our things, gave a kiss to grandma and we left for the north to study, work, become adults. To find a place.

A difficult path - homesickness, feeling like a stranger, having to cook things yourself - relieved from time to time by the arrival of the wonderful "pack from southern Italy": a pantry cleverly designed to contain a cup of everything, and boxed to get through the journey unscathed.

When you get the last package, you never know it's the last. And those dishes, those perfumes, the image of the hands that prepared them, take on a taste of melancholy.

So, now grown up, we retraced our steps. We went back to the places of our grandmothers, we asked for some recipes and we collected others from the notebooks of those that were no longer there, so that they would not be lost. Indeed, for them to become available to anyone who wishes eat well, genuinely. As grandma ordered.

Coppino® is the result of our adventure: a rediscovery of flavours, traditions, memories that bind us to our land.

Coppino®

The coppino (in Apulian cuppein - kop'pinə) is the standard unit of measure adopted by grandmothers all over the world. Its peculiarity is that it does not correspond to a predefined quantity of food, but rather contains always the right one.

The coppino is the symbol of our food revolution. Through the simple dishes of the Apulian tradition, we propose a return to the origins: when the kitchen served, above all, a give food.

The kitchen

Coppino is popular cuisine, because it wants to give everyone the opportunity to eat well; but it is also radical cuisine, because it does not compromise. Our dishes are those traditional, without bizarre variations: few dishes, but as grandma ordered.

Ingredients

Our grandmothers went shopping at the neighborhood Markets, where they called the peasants by name. Our idea of ​​good food is still there: we know the producers one by one, we know how they work and how much care they put into their products.

Our ingredients had to pass the test of the toughest critics: our grandmothers. Because 'quality' is an abstract concept until you find it on your plate.
